The making of the wine – visit of the fermentation installations
It quickly became apparent that the fermentation installations of the Fustier Company, bought in December 2006, were obsolete, as is often the case in old properties. Because of the access difficulties, the bad situation, the absence of effluent evacuation (the waste waters after fermentation) and a very doubtful hygiene of the floor, it was decided to build new fermentation installations to guarantee quality for the simple and healthy management of each stage of the wine making.
 

  The fermentation installations were built within a few weeks, according to the urban norms required in this area about 500 metres from the “Chateau”.

These installations consist of a series of tanks made of thermo-regulated stainless steel which enables a precise control of their temperature - an essential point during the wine making. This series of tanks of 107 hl each is used during the wine making whereas the old ones on the property which are made of concrete (a material which enables good thermal insulation of the wine) are used as storage tanks for the wine. They have a total capacity of about 1500 hl. To ensure a perfect hygiene they have been completely tiled on the inside, and painted in yellow and red to give them an original look.

A brand new automatic pneumatic wine-press was added to this equipment before the grape harvest.

The installations have a section for heating-cooling and a part of the tanks are on nitrogen (nitrogen protects the wine in a partly filled tank from air oxidation.

This high tech material enables us to constantly produce top quality wine year after year.

The effluents are dealt with by direct spreading in a neighbouring field which is part of the property.
